Amlou – der leckere Mandelaufstrich aus Marokko / Amlou – the delicious almond spread from Morocco

Während unseres Roadtrips in Marokko in diesem Jahr lernten wir etwas ganz Besonderes kennen und lieben – Amlou – ein Brotaufstrich oder Topping für Joghurt aus gerösteten Mandeln, Arganöl und manchmal etwas Honig. Wir haben es zum ersten Mal in einer traumhaften Kulisse in unserem Hotel Ksar El Kebbaba in der Skoura Oase zum Frühstück gegessen und das kleine Schüsselchen war ziemlich schnell leer.

During our road trip in Morocco this year we got to know and love something very special – Amlou – a spread or topping for yoghurt made from roasted almonds, argan oil and sometimes some honey. We had it for the first time for breakfast in our beautiful hotel Ksar El Kebbaba in the Skoura oasis. The small bowl was empty pretty fast. Meine Kollegin Karima bezeichnete es später mal als das marokkanische Nutella – nicht unbedingt von den Zutaten her, aber es hat auf jeden Fall einen identischen Suchtfaktor. Eigentlich besteht Amlou nur aus Mandeln, Arganöl und Prise Salz und etwas Honig.

My colleague Karima later described it as the Moroccan Nutella – not necessarily based on the ingredients, but it definitely has an identical addictive factor. Actually Amlou consists only of almonds, argan oil and pinch of salt and some honey.

Frühstück / Breakfast at Ksar El Kabbaba

Das Arganöl, was wir im Moment noch verwenden, haben wir auf unserem Roadtrip gekauft in der Kooperative ASSAISS OUZEKA FEMMES ARGAN. Diese Kooperativen gibt es inzwischen sehr oft in Marokko und das vorrangige Ziel dieser besteht darin, die Arbeit der Frauen in der Region zu fördern. 30 von ihnen arbeiten permanent in der Werkstatt, wo wir den gesamten Herstellungsprozess verfolgen konnten. Wir bekamen eine umfassende Führung, in der uns erklärt wurde, wie aus der harten Nuss ein so aromatisches und tolles Öl wurde. Das Öl, dass wir dort mitgenommen haben (zum Essen und für die Haare – Locken muss man ja pflegen) ist unglaublich toll. Wie das Öl gemacht wird, könnt Ihr Euch hier in dem kleinen Video anschauen.

The argan oil, which we still use at the moment, we bought on our road trip the cooperative ASSAISS OUZEKA FEMMES ARGAN in which argan oil is produced. These cooperatives are now very common in Morocco and their primary objective is to promote the work of women in the region. 30 of them work permanently in the workshop, where we were able to follow the entire manufacturing process. We got a comprehensive tour, in which we were told how the hard nut became such an aromatic and great oil. The oil, which we took there (for food and for the hair – you have to care for your curls) is incredibly great. Have a look at this little video to see how the Oil is made.

Man kann Arganöl auch in Deutschland kaufen, z. B. bei Edeka oder auch in einigen Onlineshops. Dabei sollte man darauf achten, dass es reines Bio-Arganöl ist und sich nicht um gepanschtes Öl handelt. Arganöl ist nicht billig, aber es lohnt sich. Es hat einen unvergleichlichen nussigen Geschmack mit leckeren Röstaromen.

Seit wir wieder zuhause sind, machen wir damit Amlou selber, denn die beiden mitgebrachten Töpfchen waren leider viel zu schnell leer.

You can buy argan oil also in Europe in good Supermarkets or in some online shops. Take care that it is pure organic argan oil and is not adulterated oil. Argan oil is not cheap, but it’s worth it. It has an incomparable nutty taste with delicious roasted aromas.

Since we are back home, we make Amlou all the time on our own, because the two brought pots were unfortunately empty so fast.

Die Zubereitung ist sehr einfach und es geht auch recht schnell. Anders, als in Marokko, haben wir geschälte Mandeln genommen, weil ich von der Mandelhaut ab und zu allergische Reaktionen bekomme. Deshalb ist das Ergebnis erheblich heller, als das Original in Marokko, da dort die Farbe der Mandelhaut alles dunkelbraun färbt.

Wir nehmen Mandelstückchen und rösten sie – langsam, damit sie nicht verbrennen. Anschließend geben wir sie in einen großen Mörser (Küchenmaschine geht auch) und zerkleinern sie.

The preparation is very simple and it is also quite fast. Unlike in Morocco, we took peeled almonds because sometimes I get allergic reactions from almond skin. Therefore, the result is much brighter than the original in Morocco, where the color of the almond skin colors everything in a dark brown.

We take almond pieces and roast them – slowly, so they do not burn. Then we put them in a big mortar (or food processor) and crush them.

Dann rühren wir Arganöl, ein bisschen Honig und ein kleines bisschen Salz unter. In Marokko ist Amlou meist sehr flüssig, aber wir mögen es lieber als Paste.

Then we add argan oil, some honey and a little little bit of salt. In Morocco you will find a more liquid Amlou. We prefer to keep it as a paste.

Das fertige Amlou hält sich mehrere Wochen im Kühlschrank – nur nicht bei uns. Essen kann man es mit Joghurt oder zu einem Marmeladenbrötchen. Oder einfach pur – es ist sehr sehr lecker.

Und nicht den Pott süßen marokkanischen Minztee vergessen 😉

The finished Amlou lasts several weeks in the fridge – but not in ours. You can eat it with yogurt or with an sweet bun with jam. Or simply pure – it is unfortunately very delicious.

And don´t forget to make am pot of sweet moroccan mint tea 😉
